Berry Cashew Cream Dessert Jars

Fancy a healthy but still super yummy dessert in a cute jar? This fresh, creamy and fruity recipe should hit the spot! You only need to have your cashews soaked, apart from that it will take you minutes to prepare this treat. Give it a try, your sweet tooth will be satisfied and your belly will be happy with all the wholesome ingredients you'll get in!

Ingredients: (makes 2 regular or 4 small jars)

  • 1/4 cup cashews, soaked overnight or 1 hour in hot water
  • 1/4 cup oats, soaked in 1/4 cup warm water for about 15-20 minutes or until all the liquid gets absorbed
  • 1 tbsp almond butter (or different nut butter of choice)
  • 2 medjool dates, chopped
  • 1/2 cup frozen berries (I used raspberries)
  • 3/4 cup almond or coconut milk
  • 1/2 tsp vanilla extract
  • (optionally) coconut yogurt or whipped coconut cream as topping - can be mixed with a tsp of maple syrup


  1. Simply blend all the ingredients (besides coconut yogurt or coconut cream) on high speed until completely smooth and creamy.
  2. Transfer to the jars, top with coconut yogurt or cream, sprinkle dark chocolate shavings on top.  You can decorate the desserts with fresh or frozen berries and mint leaves. Serve immediately or store in the fridge before serving.
