Healthy Banoffee Cups with Salted Date Caramel

I will tell you a secret - I love making bigger batches of salted date caramel and keeping it always in my fridge. It's such a game changer! If you have the caramel ready, putting together this easy and healthy banoffee dessert will take you only 10 to 15 minutes. But even if you have to make the caramel from scratch you won't regret it - few extra minutes of blending to have a jar filled with that liquid gold, that you can also put in your oatmeal bowl, nicecream, cookies or just eat with a spoon.

Anyway - give this easy dessert recipe a try, it's such a lovely and healthy twist on the classic banoffee pie, and believe me - all the original flavours are there but plantbased and wholesome!

Ingredients (makes 3-4 cups)


For the crumble:

  • 1 cup pecans
  • 5-6 medjool dates, pitted
  • pinch of Himalayan salt

For the caramel:

  • 1 cup dates, fresh and juicy or soaked in hot water for 30 minutes, pitted
  • 1/4 cup smooth and runny peanut butter
  • 1/2 to 1 cup of water
  • 1/2 tsp himalayan salt

For the whipped cream:

  • coconut cream from one can of chilled coconut milk (only the solid part)
  • 1 tsp maple syrup


  • 1 large banana cut in slices
  • raw cocoa powder and dark chocolate shavings




  1. Prepare the crumble by placing all the crumble ingredients in a food processor and blending until crumbly consistency.
  2. Prepare the caramel by placing dates, peanut butter, salt and half cup water in a food processor or blender. Blend until smooth. Add more water to achieve your favourite consistency and blend again until well incorporated. Transfer the caramel to a jar and store in the fridge for up to 1 week.
  3. Place coconut cream in a high bowl and whip until fluffy. The easiest method is to use a hand blender with a whisk that can beat the cream on high speed.
  4. Assemble the jars - place the layer fo pecan crumble on the bottom, followed by a layer of banana slices, then salted date caramel and coconut cream. Sprinkle with cocoa powder/ chocolate shavings.
  5. Refrigerate before serving or enjoy straight away!
